My today's recipe is Kerala kakkayirachi pepper fry / Kerala style clams pepper fry / Kakka Erachy pepper fry.
Clam meat / Kakka erachi ~ 800 grams
Onions ~ 2 medium sized ( finely chopped )
Green chilies ~ 5 nos ( finely chopped )
Ginger ~ a small piece ( peeled & crushed )
Garlic ~ 3-4 cloves ( peeled & crushed )
Curry leaves ~ 2 stems
Turmeric powder ~ 1/2 tsp
Red chilly powder ~ 1 tsp
Black pepper powder ~ 2 tsp
Home made garam masala ~ 1/8 tsp
Tomato ~ 1 large sized ( finely chopped )
Mustard seeds / Kaduku ~ 1/2 tsp
Oil ~ 3 tbsp
Salt to taste
- First clean the clams by removing its black color intestine using your hands. Then wash it nicely and allow it to drain.
- Next heat oil, preferably in a non-stick pan and add mustard seeds. When the mustard seeds start to crackle, add curry leaves followed by crushed ginger and garlic and fry for couple of seconds. Then add chopped onions and green chilies and saute till onions become light brown in color.
- Then lower the flame and add turmeric powder & red chilly powder and fry for about 30 seconds. Then add chopped tomatoes and saute for another 1-2 minutes.Next add clams along with enough salt and mix it nicely.
- Finally add black pepper powder and garam masala and cook covered in a low flame without adding any water for about 15 minutes. Then cook uncovered for another 15 minutes or till the water is almost fully evaporated from the clams.
Enjoy with rice.
