Indian style baked salmon

Salmon, a healthy and delicious oily fish which is rich in Omega 3 fatty acids, proteins and vitamin D. I actually started having this fish only after my wedding. During those days I used to buy frozen salmon and made Kerala fish curry with it. It tasted okay but not anything fabulous, I was not sure at that time what should I try to make it more delicious and I kept blaming that fish for wrong reasons. Couple of weeks later we went to a seafood restaurant and my husband ordered grilled salmon and it tasted so delicious that I had to change my opinion about salmon and started loving it. From that day onwards, we either bake or grill salmon and now a days this is how I mostly make salmon and my family and friends are loving it..

Recipe for Baked salmon using Indian spices / Kerala style baked salmon :

Salmon fillet, boneless ~ 16 oz / 1 Pound ( Cut into 2 pieces )
Cayenne pepper powder / Paprika / Kashmiri chilly powder ~ 2.5 tsp
Black pepper powder ~ 1.5 tsp
Turmeric powder / Manjal podi ~ 1/8 tsp
Fennel powder / perinjeeraka podi ~ 1/2 tsp
Cumin powder / Jeeraka podi ~ 1/2 tsp
Garlic powder / Finely chopped garlic ~ 1/2 tsp
Melted butter / Olive oil ~ 2 to 4 tbsp
Lemon juice ~ 2.5 tbsp
Dried parsley ~ 1.5 tbsp - Crushed with your palms. ( Optional )
Salt to taste

Method
  • First wash the fish fillets under cold water and allow it to drain and finally pat dry using a paper towel. 
  • Then in a bowl make a paste of red chilly powder, black pepper powder, turmeric powder, cumin powder, fennel powder, garlic powder, salt, crushed dry parsley and lemon juice by adding 2-3 tablespoons of water. 
  • Next brush half of the olive oil / butter on the fish fillet and let it sit for about a minute. Divide the marinade and apply it evenly on the fish fillets and refrigerate it for about 15-20 minutes.
  • Meanwhile preheat oven to 400 F and line the baking dish with aluminum foil. Remove any excess marinade from the fish fillets and place the fish fillet in the baking dish and bake for about 20 to 25 minutes in the middle rack. Finally apply the rest of the oil/butter and turn on the broiler and broil for just 1-2 minutes. 

Serve with some sauteed vegetables and a lemon wedge. 

Notes : This dish tastes best if you are using salmon fillets with skin. Salmon with skin gives off lots of healthy oil while its cooking, so you can either omit or add very little oil. Before cooking remove the fish scales using a knife and bake with the skin side down.
