Today I am sharing my mom's Kerala mutton curry recipe.
Ingredients
Mutton ~ 500 grams
Cardamom ~ 3 Nos
Cloves ~ 5 Nos
Whole Peppercorns ~ 1/4 tsp
Cinnamon Stick ~ 2 inch piece
Star Anise ~ 1 No
Fennel seeds ~ 1/2 tsp
Onions ~ 2 Nos
Green chillies ~ 5-6 Nos ( Split length-wise )
Ginger ~ a medium size piece
Garlic ~ 5 cloves
Coriander powder ~ 2 tbsp
Red chilly powder ~ 2 tsp
Pepper powder ~ 1/2 tsp
Tomatoes ~ 2 Nos
Potatoes ~ 2 Nos
Chopped coriander leaves ~ 1/2 cup (Optional)
Curry leaves ~ 1 stem
Salt to taste

Method
- Wash and cut mutton to medium size pieces and keep it aside.
- Crush cardamom, cloves, peppercorns, cinnamon stick, star anise and fennel seeds using a mortar and pester.
- Then heat about 3-4 tbsp of oil in a pressure cooker / pan and add crushed spices and fry for a minute. Then add chopped onions, green chillies, curry leaves, chopped ginger and chopped garlic and saute till onions become transparent. Then lower the flame and add coriander powder, red chilly powder, pepper powder and turmeric powder and fry till the powder become lightly brown in color. Do stir continuously in order to prevent the powders from being burnt.
- Then add mutton pieces, chopped tomatoes, chopped potatoes, enough salt along with 3/4 cup of water and mix it nicely. If you are cooking in an Indian pressure cooker, then cook till 4-5 whistles in a medium flame or cook covered in a pan till the mutton pieces become tender.
- Then allow the pressure cooker to cool. When the pressure is fully released open the lid and simmer for about 5-10 or till the gravy thickens and then finally add chopped coriander leaves and remove from the flame after 2 minutes.
Serve with Rice.

@smitha - yes, I do put bones in mutton curry coz I personally felt that the mutton curry with bones is more tastier than the one with without bones.Usually in kerala we prepare mutton curry with bones...:)
