Ulli Sambar / Onion Sambar

 


Today I am sharing the recipe of Ulli Sambar / Onion Sambar.This recipe tastes similar to our usual sambar. But for this recipe we don't add vegetables like yam ,plantain , cucumber , drumsticks etc but we only use onions and tomatoes. You can either use shallots or onions for this recipe.

Ingredients

Onions ~ 2 Nos / Sliced Shallots ~ 1 cup
Toor Dal / Thuvara Parippu ~ 1/2 cup
Green chillies ~ 4-5 Nos ( Split length-wise)
Coriander powder ~ 2 tbsp
Red chilly powder ~ 3/4 tbsp - 1 tbsp
Fenugreek powder ( Ulava podi ) ~ 1/4 tsp
Turmeric powder ~ 1/4 tsp
Cumin powder ( Jeerakam Powder ) ~ 2 pinch
Asafoetida powder / Kayam Powder ~ 2 pinch
Tomatoes ~ 1 no
Tamarind Paste ~ 1 tsp or You can even squeeze out the juice of a lemon size tamarind soaked in water.
Chopped coriander leaves ~ 1 cup
Dry red chillies ~ 2-3 Nos
Mustard seeds
Oil
Salt

Method

  • First wash and pressure cook toor dal by adding about 1 1/2 cups of water and little salt till 1-2 whistles.
  • Then heat oil in a pan and add mustard seeds. When it crackles, add dry red chillies and saute for a minute. Then add chopped onions and green chillies and fry till onions become soft. 
  • Then add coriander powder, red chilly powder, fenugreek powder, turmeric powder and cumin powder and fry in low flame till its raw smell goes. Make sure not to burn the powders. 
  • Then add chopped tomatoes and saute for another 1-2 minutes. Then add cooked dal along with enough water, tamarind paste and salt and simmer till the gravy thickens. Finally add chopped coriander leaves and asafoetida powder and remove from the flame after 2 minutes.
Enjoy with Rice or Dosa.
