Today I am sharing the recipe of Thenga varutharacha koottan or Fried coconut curry. Actually I love all the dishes with fried coconut in it and when I saw this recipe in vanitha magazine along with a very tempting pic I didn't think much, just gave it a try. The final result was delicious and I enjoyed it with rice.
Ingredients
Vazhakka / Raw Plantian ~ 4 Nos
Red chilly powder ~ 3/4 tbsp - 1 tbsp
Coriander powder ~ 1 tsp
Turmeric powder ~ 1/4 tsp
Grated coconut ~ 3/4 cup
Green chillies ~ 8 Nos ( Split length-wise)
Chopped ginger ~ 1 tbsp
Tamarind paste ~ 1/2 tsp / You can even squeeze the juice out of a very small lemon sized tamarind which was soaked in water for at least 15 minutes.

Method
- First peel the plantain and cut it into medium size pieces. Then heat a little oil in a pan and add grated coconut and fry in a medium low flame till the coconut turns brown in color. You have to keep on stirring it continuously , otherwise it may get burnt. When the grated coconut turns almost brown in color, add red chilly powder, coriander powder and turmeric powder and fry for about a minute or till the raw smell of the powder goes. Then allow it to cool and grind it to a fine paste by adding 5-6 tbsp of water.
- Then mix ground coconut paste, chopped plantain, tamarind, salt, curry leaves, chopped ginger and green chillies along with 2 cups of water and cook covered for about 15 minutes in a medium flame and remove from the flame.
