Parippu Vada



Today I am sharing the recipe is of parippu vada / masala vada / kerala lentil fritters which is one of the popular tea time snacks in Kerala..

I still remember there was a small tea shop / "chaayakkada" near my school and since its very near to the bus stop, most of the students will be standing in front of that shop...They used to make a wide variety of Kerala style snacks like parippu vada , uzhunnu vada, neyyappam, achappam etc etc, and will arrange those nicely in their glass cabinets just to attract the students...The aroma of those snacks are all over there in the air that we are forced to look at those cabinets..Due to the lack of pocket money, most of days I was forced to stand outside that shop, tasting those delectable snacks only with my eyes.:(..There were times, when I was lucky enough to get a 10 rupees note from my mom and I feel so rich on that day that just after hearing the last bell of my school, I will confidently enter that shop and mostly I will go for parippu vada mainly because its so spicy and crunchy..I used to have 1-2 parippu vadas in that shop itself and for take-out the shopkeeper will pack the parippu vadas in an old newspaper. Couple of days back I was remembering all those good old days and suddenly I felt like having parippu vada, and I didn't think much, just made it on that day itself....:)...If you also feel like having some parippu vada after seeing this post, just don't think much, just start making it...... Okay, so here comes the recipe...

Servings ~ 2-3 adults ( We can make around 15 parippu vadas )

Ingredients

Toor dal ( Thuvara parippu ) ~ 3/4 cup
Chana dal ( Kadala parippu ) ~ 1/4 cup
Dry red chillies ~ 5 nos
Green chillies ~ 4-5 nos ( Finely chopped )
Curry leaves ~ 1 stem ( Finely chopped )
Shallots ( Kochu ulli ) ~ 4-5 nos
Ginger ~ 1 medium sized piece
Red chilly powder ~ 1/2 tsp (Optional)
Asafoetida powder (Kayam podi) ~ 2 pinch
Oil ~ around 1 - 1 1/2 cups or use as needed.
Salt to taste

Method
  • First wash the dals nicely by changing the water 2-3 times and then soak it in enough water for about 2 1/2 hours.Then drain it using a colander and let it drain for about 30 minutes. Meanwhile soak dry red chillies in water. After 30 minutes ,you can press the dal with a paper towel, which will help in removing any water left in the dal.
  • Then coarsely grind soaked dal and dry red chillies in a mixer grinder for just 3-5 pulses without adding any water. Do make sure not to make it to a fine paste.
  • Next crush or coarsely grind shallots and ginger and keep it aside. Finally add crushed shallots and ginger, green chillies, curry leaves, red chilly powder, asafoetida powder and enough salt to the ground dal mixture and mix it nicely. Keep it aside for about 5-10 minutes.
  • Then make around 15 small balls of dal mixture and keep it in a plate. Meanwhile heat enough oil in a deep bottom pan in a medium-low flame. Then take each ball and carefully flatten it using your palms and slowly add to hot oil and deep fry it. Turn it in between till both sides becomes golden brown in color. It might take about 3-4 minutes and then transfer the fried parippu vada to a paper towel. 
Notes: 
  • If you want then you can avoid that 1/4 cup chana dal and  make parippu vada by using 1 cup of toor dal.
  • Make sure that there isn't much water left in the dal before grinding otherwise the parippu vada will break apart.

Update : My friend "Dhanz" told that adding finely chopped coriander leaves will enhance the taste of parippu vada, and I am sure it will..So you guys can try adding chopped coriander leaves to the dal mixture and then fry it...Hope u will love it...:)
