Kanava Thoran / Koonthal Thoran



Today I am sharing the recipe of Kanava Thoran / Koonthal Thoran / Squid Stir fry. Usually my MIL prepares this dish back at home and I got this recipe from her.

Serves ~ 2 adults

Ingredients

Squid / Kanava  ~ 1 kg
Turmeric powder ~ 3/4 tsp
Black pepper powder ~ 1 tsp
Curry leaves
Onions ~ 1 No
Oil ~ 3 tbsp
Salt to taste.

For grinding :-

Grated coconut ~ 1/2 cup
Cumin seeds / Jeerakam ~ 1/2 tsp
Red chilly powder ~ 1/2 tsp
Fenugreek powder / Uluva Podi ~ 1/4 tsp
Green chillies ~ 5 Nos
Tamarind ~ a very small piece / 1/2 tsp tamarind paste
Garlic ~  2-3 cloves
Ginger ~ a small piece
Shallots / Kochulli ~ 3-4 Nos 
Turmeric powder ~ 1/4 tsp

Method

  • First clean the squid / kanava and drain it nicely. Then slice the squid into rings and pressure cook the squid by adding 1 tsp pepper powder, 1/2 tsp turmeric powder and salt without adding any water for just one whistle. The squid will give off some juices while cooking so please make sure to drain it properly and not to add any water while cooking. 
  • Grind coarsely grated coconut, cumin seeds, shallots, green chillies, red chilly powder, ginger, garlic, fenugreek powder, tamarind and turmeric powder.
  • Then heat oil in a pan and add mustard seeds & curry leaves and when it crackles, add chopped onions and when the onions become soft, add cooked squid/ kanava and in a medium-high flame and fry till almost all the remaining water in the squid is evaporated. Then lower the flame and add ground coconut mixture and cook for another 5-6 minutes and remove from the flame.
Enjoy with Rice.
