Brinjal Mezhukkupuratti



Today I am sharing the recipe of Brinjal mezhukkupuratti / Vazhuthananga mezhukkupuratti / Kathirikkai mezhukkupuratti / Eggplant stir fry. Its very easy to prepare and goes very well with Rice.

Serves ~ 1-2 Adults

Ingredients

Chopped Brinjal ~ 2 1/2 cups ( Medium sized pieces)
Green chillies ~ 5 Nos ( Split length-wise)
Onion ~ 1 No ( Medium sized )
Turmeric powder ~ 1/4 tsp
Black pepper powder ~ 1/4 tsp
Curry leaves
Mustard seeds ( Kaduku )
Salt to taste
Oil

Method

  • First wash and chop Brinjal to medium sized pieces and then drain it nicely. Then heat little oil in a pan and add mustard seeds and when it crackles, add chopped onions, green chillies and curry leaves. Saute till onions become soft. 
  • Then add turmeric powder, black pepper powder,chopped brinjals and enough salt and mix it nicely.Then cook covered in a low flame for about 5 minutes. Then cook uncovered for another 7-8 minutes and remove from the flame. 
Enjoy with rice.

Its my favourite one Jisha but we add small amount dry anchovy on it.Rasam and Brinjal Mezhukkupuratti are a good combo..yummy;)
