Kerala Style Egg Roast


Today I am sharing the recipe of Kerala style spicy egg roast which is a popular dish in Kerala. Egg roast is a great accompaniment for Appam. It goes very well with Puttu also.

Servings : 2 Adults

Ingredients

Egg ~ 2 Nos
Onions ~ 2 Nos
Ginger ~ a small piece
Garlic ~ 3-4 cloves
Green chillies ~ 2-3 Nos 
Curry leaves ~ 1 stem
Coriander powder ~ 1 tsp
Red chilly powder ~ 3/4 tsp - 1 tsp (Add according to your spice preference )
Pepper powder ~ 1 tsp
Home made garam masala ~ 1/2 tsp
Turmeric powder ~ 1/4 tsp
Tomato ~ 1 Large sized
Coriander leaves (Optional)
Mustard seeds
Salt
Oil

Method

  • First boil water and add eggs slowly along with little salt and cook it covered for 20 minutes. Then put the eggs in cold water for about 2 minutes and then peel the shell and keep it aside.
  • Heat oil, and add mustard seeds. When it crackles, add thinly sliced onions and saute till onions become light brown in color. Then add chopped green chillies, curry leaves and crushed ginger and garlic and fry for 1-2 minutes. Then lower the flame and add coriander powder, red chilly powder, turmeric powder, garam masala and pepper powder. Fry for about a minute or till the raw smell of the powders go and then add finely chopped tomato along with enough salt and fry till tomatoes are nicely cooked and mashed up.
  • Then add 1/3 cup of water and allow it to boil till the gravy becomes thick. Meanwhile make small vertical slits on the hard boiled eggs using a knife and put the eggs in this gravy. Slowly mix it and remove from the flame after 2-3 minutes. Garnish with chopped coriander leaves.
Enjoy with Appam / Puttu / Chapathi.
